Ingredients
- confectioners sugar
- 2 eggs
- Salt (pinch)
- 1/2 cup unsalted butter (melted)
- 3 teaspoons baking powder
- 3 cups all purpose flour
- 1 vanilla (in powder)
- 1/2 cup caster sugar
- 3 egg yolks

Directions
1. With an electric mixer beat the whole eggs and 2 egg yolks until frothy.
2. While stirring slowly add the caster sugar and vanilla and then stir in the melted butter.
3. Using the elctric mixer at a slow stream add the flour, baking powder and salt in the egg mixture.
4. Mix well until flour is dissolved and a tough dough is formed.
5. Shape the cookies with your hands and place on a buttered baking pan 3cm (1.2 inches) apart.
6. Brush the cookies lightly with some egg yolk.
7. Preheat oven anf bake at 180C (350F) for about 20-30 minutes.
8. Remove from oven and allow for the cookies to cool.
9. Sprinkle with confectioners sugar if desired
