Saliaria [ Northern Greece Christmas Dessert ]
Ingredients

  • 3/4 cup fresh orange juice
  • 5 cups flour
  • 1 tablespoon cognac
  • 1 cup walnuts finely chopped
  • 1.5 cup olive oil
  • 1 teaspoon cloves
  • Rind of one orange grated
  • 1 tablespoon caster sugar
  • 2 teaspoons cinnamon
  • 1 toasted bread, grated
  • 1 tablespoon confectioners sugar
  • Salt
  • 1 teaspoon baking powder

Directions

1. Mix the flour, baking powder, salt, 1 teaspoon of cinnamon and the orange rind. In the flour mixture pour the oil gradually while mixing constantly with a fork until the mixture is stiff but not oily.
2. Add the cognac and the orange juice and kneed the mixture lightly.
3. Using a small spoon take a piece of the mixture the size of a walnut, place in your hand and with your thumb press until it becomes a sheet. Then place a teaspoon of the filling mixture in the middle. Join the edges of the pastry sheet. Repeat with the rest of the pastry and filling mixture.
4. Place the saliaria on a large baking pan spaced apart and bake at 175C (350 F) until the bottom part of the desserts are reddish (around 30-45 minutes).
5. Place the hot desserts on a plate with confectioners sugar and roll the desserts to cover them fully. Arrange on a plate and sprinkle with some extra confectioners sugar.
